This truly is a comfort dish. Kathy, who's one of our listeners, called me with this fantastic recipe she makes for her family at Thanksgiving. My co-workers are eating hearty today. Yum, yum, yum!

Kathy's Sausage and Noodle Casserole

What You Need:

  2 packages of sausage 1 with sage and 1 hot or mild (I use hot)
  4 cups of small elbow macaroni
 
*Cook sausage in patties either in frying pan or oven (on cookie rack so grease drops down into pan) Save some grease!
* Crumble sausage when cool to touch (OK to have some big pieces )
* Add 1 teaspoon of sage
              1 tablespoon of sausage seasoning
              1 tablespoon of Italian seasoning
* Mix well into sausage
 
 * Cook elbow macaroni aladenta (not completely done) and salt the water and drain
 
 * Mix sausage and noodles together. Taste and season more if needed.
 Add some grease to moisten noodles – start with small amount can always add more!
* Place in large casserole dish
* Bake 350 for 20 minutes or refrigerate overnight to let flavor set in and  cook next day.
